Ironically, many overweight people diet and snack on rice cakes, which rapidly boost blood-sugar and insulin levels—and actually contribute to weight gain and diabetes risk. Other options—in moderation—include sweet potatoes, yams, and various types of brown, red, purple, and black rices. (See "Some Acceptable High-Carb Foods in Moderation" earlier in this chapter.) Supplementing 7-KETO (3-acetyl-7-oxo-dehydroepiandrosterone) has been shown in a study of overweight people to help with weight and fat loss. Take 100 mg twice daily. Dandelion root (Taraxacum officinale) improves liver metabolism and detoxification, which may support weight loss. Take 300 mg or 2 ml with each meal. Bladderwrack (Fucus vesiculosus) supports thyroid function. Use it if you have sub-optimal thyroid activity. Take 100 mg or 1 ml twice daily. However, overweight people who lose even modest amounts of weight experience a reduction in blood pressure. Vegetarians generally have a lower incidence of high blood pressure and other cardiovascular diseases than do nonvegetarians. While dietary levels of sodium do not differ significantly between these two groups, a vegetarian's diet typically contains more potassium, complex carbohydrates, essential fatty acids, fiber, calcium, magnesium, and vitamin C, all of which have a favorable influence on blood pressure, and less saturated fat and refined carbohydrate.

This misconception leads to massive confusion and explains why so many overweight people are not succeeding in losing weight. I am sure that many people would be shocked to find out that we may gain weight from eating, say, cheese, not only because it is rich in fat, but mostly due to its high acidic level. In response to high pH acid, the body creates fat cells to store the acid. For example, almonds have 70% fat, and pork has only 58%. However, pork has one of the highest acid values, -38, while almonds are alkaline forming, +3.

Not surprisingly, a couple of weak-hearted overweight people suffered heart attacks and died. From that isolated abuse of the herb, the FDA banned all ephedra. But here's the smoking gun: It kept Sudafed legal even though Sudafed contains the same chemical constituents as ephedra! That's where the name of the drug comes from: "pseudo" and "ephedra." Put them together and you get "Sudafed." So why was the herb (ephedra) banned while the drug (Sudafed) was kept on the market?

I don't question the worthiness or dignity of overweight people any more than I question cancer victims. My criticism is of a societal system that allows and even encourages this problem. I believe, for example, that we are drowning in an ocean of very bad information, too much of it intended to put money into someone else's pockets. What we really need, then, is a new solution comprised of good information for individual people to use at a price that they can afford. THE SOLUTION The solution to losing weight is a whole foods, plant-based diet, coupled with a reasonable amount of exercise.

Fueling prejudice and weight-loss obsession Another problem with the obesity focus is that it serves to reinforce and perpetuate the prejudices that many Americans have against overweight people. What's the first thing you think of when you hear the word obesity) A fat person, right? And what stereotypes and biases go along with that? Among other negative traits, obese people are often viewed as lazy and irresponsible, with no one but themselves to blame. Obese people are already subjected to rampant discrimination, for example, in the workplace and health-care settings.
In an ironic twist of global "progress," the number of overweight people around the world—1.1 billion— now roughly equals those who are underweight, with both populations suffering from malnutrition and disease.13 But more important than obesity are the increased health risks associated with poor diet, which include heart disease, type 2 diabetes, hypertension, stroke, and certain cancers. Even thin people aren't immune to the negative impacts of eating too much of the wrong foods. Cardiovascular disease is by far the nation's number-one killer, claiming more than 900,000 lives in 2002.

Once the gas gauge starts to stick, it becomes harder and harder to lose weight by reducing calories. Many overweight people find they that can eat very little and not lose weight, or that they even gain weight eating seemingly normal portions of food. Unfortunately, their gas gauge is stuck on empty. While there is still hope for fixing more difficult problems, it is much easier to fix a small leptin problem than a large one. The moral of the story: once in shape stay in shape.

Virtually all overweight people do not make this phone call properly. There is plenty of leptin; it just does not get through to the brain. The fat cells make repetitive phone calls, and the brain does not answer. The net result is that the brain thinks the body is still starving and continues to order the storage of fat, even though there may be plenty of fat already in storage. This is like having a tank full of gas with the fuel gauge stuck on empty. The problem is not having too much or too little of the hormone leptin; the problem is leptin not working efficiently.
The main target for the leptin message is the hypothalamus gland of the brain. In overweight people who have difficulty controlling the amount of food they eat, their body is insulin resistant and their brain is leptin resistant. There are too many of these hormones circulating, and they are not productive. In a normal situation, the white adipose tissue is trying to make a phone call to the brain. The message traveling over the phone line is a hormone called leptin.
Virtually all overweight people are low in antioxidants.150 It has long been known that B vitamins, Krebs cycle intermediates - especially malic acid, magnesium, and coenzyme Q10 are needed for cellular energy production (ATP synthesis). Thus, one strategy for weight loss is to ensure there are enough B vitamins and magnesium for energy production. These could be taken at meals or before exercise. Specifically to enhance the fat burning during exercise, an individual could take 100-200 mg of coenzyme Q10 and a multiple antioxidant just before doing the exercise.
Leptin was a big problem for a fat mouse, yet it was not really a problem for overweight people, or was it? Was it causing diabetes or preventing diabetes? Was it causing cancer or preventing cancer? Was it causing heart disease or preventing heart disease? Was it causing hormonal problems or was it the problem itself? Was it helping pregnancy or causing infertility? Or did it not matter one way or the other? The complexity of the contradictions was overwhelmingly interesting and intriguing. Thus began a journey that will forever change the way we view health.

Another example of how impaired liver function can slow weight loss is "fatty liver," a condition that many overweight people develop. It's not life-threatening, but it's also not something you want to put on your hoiiday wish list. A very early symptom of possible liver disease frequently seen in alcoholics, it basically means that fat is backed up in the liver like cars on a multilane freeway trying to get through a single toll booth. Modern life puts a lot of stress on the poor overworked liver.
Tarnower was something of a paternalistic jerk, given to statements like "Let's face it—most overweight people love to eat. The very obese are often gluttonous." One of his readers wrote to him with the following question: "When I diet, I get cranky and my husband says, 'I like you better fat than cranky.' Have you any suggestions?" Tarnower wrote back, "You should be able to diet without getting cranky. Your husband, I am sure, would like to have you attractive, lean, and pleasant!

My most recent experiment was to take overweight people who didn't eat breakfast. I told them to change nothing else. Don't exercise; don't change what you eat; and don't do anything. All I wanted them to do was add a big breakfast. They were skeptical because they felt by adding additional food, calories and fat, they would gain weight. The exact opposite happened.

Another telling symptom of this problem is a person's heat response to increased physical activity. Many overweight people notice they sweat easily upon exertion, yet this is not associated with any pleasant energy production, like normal sweating during refreshing exercise. This occurs because the body has become very ineffective at burning sugar and has shunted the calories into heat production via UCP3 as a defense mechanism.137 This causes an abnormal overexpression of UCP3 and UCP2, which in turn directly damages the pancreatic beta cells eventually causing diabetes.

Spirulina: In one research study, 16 overweight people lost a small amount of weight after eating only 2.8 grams of spirulina three times per day for four weeks. Experts are still unsure exactly how spirulina suppresses hunger. One theory is that its high content of phenylalanine affects the hypothalamus; another theory is that spirulina raises blood sugar levels enough to cause the hypothalamus to reduce hunger pangs. Avocado extract tablets: Creates an aversion to sugary foods; most people lose weight by taking only two tablets per day.

Properly functioning leptin in a healthy individual appropriately turns off the production of insulin, as well as providing a proper full signal to the brain. In overweight people, the communications involving insulin and leptin are inefficient. It is like making a phone call where no one answers. Insulin resistance and leptin resistance mean that the hormones don't communicate efficiently in response to food. Thus a person has to overeat in order to get enough leptin into the brain to get a full signal.
When overweight people go on a diet, they typically enter into the starvation mode within a few weeks. Thus, weight loss grinds to a halt. The longer they keep trying to diet in a starvation mode, the worse they feel. Energy, mood, and oftentimes immunity simply bottom out. They are often twenty or more pounds from a normal weight and are stuck. While the leptin-resistance mode is a false state of perceived starvation, the starvation mode is true starvation. The Famine-Recovery Mode The famine-recovery mode is the mode most hated by any person who has just lost weight.
Actually, most overweight people have no trouble paying attention to the fat. They already know it tastes great and they will be sure to find it on their favorite fast-food menu or pick up the phone and order a pizza. Consumers really don't need the pyramid to guide them. Meat took a little beating, still having to shrug off the bad reputation it has for being the true evil—saturated fat. Of course, there was no mention that grass-fed beef actually has a very healthful fatty-acid profile conducive to good brain function and metabolism.

Weight is also a risk factor for gallstone formation. overweight people consume more food and cholesterol. Their bodies also make 49 more cholesterol. The more overweight the individual, the greater the amount of cholesterol that is secreted into the bile. And finally, aging also results in increased cholesterol secretion by the liver, supersaturating the bile, which explains why gallstones occur four to ten times more frequently in older populations. Despite the prevalence of gallbladder disease, few people know much about this tiny organ—how it functions or how to keep it healthy.

Because obesity is a stigmatized condition, overweight people, especially children, are teased, reminded repeatedly of their bodies, and victimized by discrimination. The discrimination itself would make most people anxious, depressed, and hypervigilant, but the diminished education and employment opportunities it causes can have a real impact on income and security. Overweight people often internalize negative social messages and come to feel badly about themselves. Diminished self-esteem, poor self-confidence in soicial situations, and other psychological fallout are common.

For example, overweight people may—at least in the beginning—have very nonresistant fat cells. Their muscle cells refuse to take any more sugar, but the fat cells still have open arms. These cells are said to be insulin-sensitive. The ovaries also tend to remain insulin-sensitive. If there's a genetic predisposition for these glands to overproduce androgen hormones—as there is with women who have PCOS—the excess insulin that's sent into the bloodstream to deal with the excess sugar bathes these nonresistant tissues in an ocean of insulin that is way too much for their needs.
